No-bake caramel pies with biscuit crusts.
Ingredients:
  • 1 x 250g pkt Butternut Snap Cookies
  • 1 x 300ml ctn double cream
  • 1 small banana, peeled, thinly sliced
  • 1 x 395g can sweetened condensed milk
  • 70g (1/3 cup, firmly packed) brown sugar
  • 50g butter
Instructions:
  • 1. Surround the microwave turntable with 4 biscuits. Microwave on High (800 watts/100%) for 50 seconds or until they are soft. Using a rolling pin, flatten each biscuit slightly. Press them into four 40ml (2-tablespoon) patty pans. Repeat the process with the rest of the biscuits.
  • In a medium saucepan over low heat, gently stir the condensed milk, sugar, and butter with a wooden spoon for 15 minutes until the mixture thickens to make caramel. Avoid boiling it.
  • Distribute the caramel evenly over the biscuit bases and refrigerate for 30 minutes to set.
  • Garnish with a dollop of creamy whipped topping and slices of fresh banana.
