Indulge in delicious banana baked oats made with ripe banana, egg, and almond milk - a breakfast game changer!
Ingredients:
  • cooking spray
  • 1 cup rolled oats
  • 0.5 cup almond milk
  • 1 large ripe banana
  • 1 large egg
  • 2 tablespoons maple syrup (or sweetener of your choice)
  • 1 teaspoon vanilla
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon salt
  • 0.25 cup fresh blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat two 8-ounce ramekins with cooking spray.
  • In a blender, blend oats, almond milk, banana, egg, maple syrup, baking powder, vanilla, cinnamon, and salt until smooth, about 30 to 60 seconds. Add blueberries and pour the mixture into the ramekins.
  • Bake until firm, approximately 25 minutes in the preheated oven.
