Indulgent baked oats recipe with five unique dessert-like flavors, perfect for individual servings.
Ingredients:
  • 2 cups rolled oats
  • 1 cup plain whole-milk Greek yogurt
  • 0.5 cup unsweetened almond milk
  • 0.33333334326744 cup pure maple syrup
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon almond extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons pumpkin puree
  • 2 tablespoons dried cranberries
  • 1 tablespoon chopped walnuts
  • 0.25 teaspoon pumpkin pie spice
  • 2 tablespoons sweetened flaked coconut
  • 1 tablespoon sliced almonds
  • 0.125 teaspoon almond extract
  • 2 tablespoons dried cherries
  • 1 tablespoon semisweet chocolate chips
  • 2 teaspoons unsweetened cocoa powder
  • 3 tablespoons fresh blueberries
  • 1 teaspoon maple syrup
  • 0.5 teaspoon lemon zest
  • 2 tablespoons raisins
  • 0.125 teaspoon ground cinnamon, or as needed
  • pinch of ground cloves
  • pinch of ground allspice
Instructions:
  • Preheat the oven to 350°F (175°C) and grease five 8-ounce ramekins.
  • Create the oat blend: Place rolled oats, Greek yogurt, almond milk, maple syrup, eggs, vanilla, almond extract, baking powder, baking soda, salt, cinnamon, and nutmeg in a blender. Blend on high until mixture is smooth, about 1 to 2 minutes.
  • Create delicious flavor combinations in separate ramekins: 1. Combine pumpkin purée, cranberries, walnuts, and pumpkin pie spice. 2. Mix coconut, almonds, and almond extract. 3. Stir cherries, chocolate chips, and cocoa powder. 4. Combine blueberries, maple syrup, and lemon zest. 5. Mix raisins, walnuts, cinnamon, cloves, and allspice.
  • Evenly distribute the blended oat batter into the prepared ramekins. Gently mix each batter until all ingredients are well combined. Place ramekins onto a baking sheet.
  • Bake in the preheated oven for 30-35 minutes, until the tops spring back lightly when touched. Let cool for 10 minutes before serving, or cool completely, cover, and store in the refrigerator or freezer for later. Rewarm before serving.
