Easy Sweet Potato Pie

Creamy sweet potato pie with a kick of rum, blended until smooth and baked to perfection in less than an hour.
Ingredients:
  • 2 cups cooked and mashed sweet potatoes
  • 2 eggs
  • 1.25 cups evaporated milk
  • 0.375 cup white sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 tablespoons rum
  • 4 tablespoons melted butter
  • 1 (9 inch) unbaked pie crust
Instructions:
  • Preheat your oven to a piping hot 425 degrees F (220 degrees C).
  • In a food processor, combine sweet potatoes, evaporated milk, sugar, salt, cinnamon, nutmeg, rum, eggs, and butter or margarine until smooth. Transfer mixture into pie shell.
  • Start by baking in a preheated oven for 10 minutes, then lower the temperature to 300°F (150°C) and continue baking for approximately 50 minutes until the filling sets.
