Impress with easy Southern sweet potato pie - a crowd favorite for potlucks and holidays, embodying autumn flavors.
Ingredients:
  • 2 sweet potatoes, peeled and cut into chunks
  • 1 (9 inch) refrigerated pie crust
  • 2 eggs, beaten
  • 1 tablespoon all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 0.5 cup buttermilk
  • 0.25 teaspoon baking soda
Instructions:
  • In a large pot, cover sweet potatoes with water and bring to a boil. Simmer over medium-low heat until tender, about 10 to 15 minutes. Drain and allow to cool.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then snugly tuck a flaky pie crust into the base of a pie plate.
  • Mash sweet potatoes with a potato masher or fork, then transfer 2 cups of the mash to a large bowl. Combine with sugar, eggs, butter, and vanilla extract.
  • Combine the flour, pumpkin pie spice, and salt in a separate bowl, then add it to the sweet potato mixture.
  • In a small bowl, mix together buttermilk and baking soda. Pour the mixture into the sweet potato-flour mixture and stir well. Transfer the batter into the prepared crust.
  • Place in the oven that's been preheated until the dish is set, approximately 1 hour and 10 minutes. Allow it to cool on a rack until firm, at least 20 minutes.
