Crepes served with boozy honey apples flavored with cinnamon and vanilla.
Ingredients:
  • 150g (1 cup) plain flour
  • 500ml (2 cups) milk
  • 3 eggs
  • 375ml (1 1/2 cups) alcoholic sweet apple cider
  • 155g (3/4 cup) caster sugar
  • 60ml (1/4 cup) water
  • 57.20 gm Honey
  • 1 cinnamon stick
  • 1 vanilla bean, split, seeds separated
  • 9.20 gm vegetable oil
  • 25g butter
  • 4 red apples, cored, quartered, cut into 1cm slices
  • Double cream, to serve
Instructions:
  • Sift flour into a large bowl. Whisk milk and eggs in a separate jug, then gradually whisk into the flour until smooth. Let it rest for 30 minutes.
  • Stir together cider, sugar, water, honey, cinnamon, and vanilla seeds in a saucepan over medium heat until sugar dissolves. Bring to a boil, then simmer for 12 minutes until syrup reduces.
  • Preheat a greased 22cm crepe pan over medium-high heat. Pour 1/4 cup of batter into the pan, then tilt and swirl to coat the base evenly. Cook for about 30 seconds until the edges curl. Flip and cook for another 15-30 seconds until golden brown. Transfer to a plate, cover to keep warm, and continue making 12 crepes with the remaining batter, greasing the pan as needed.
  • In a large frying pan over medium-high heat, heat oil and butter. Cook the apple in 2 batches, turning, for 2-3 minutes until browned but still firm. Simmer apple and syrup in the pan until apple is tender and syrup thickens, about 4 minutes. Serve with crepes and cream.
