A crowd-pleasing dessert with a twist on classic flavors.
Ingredients:
  • 1 x 500g pkt frozen mixed berries
  • 1 x 300ml ctn double cream
  • 1 x 250g ctn mascarpone
  • 45g (1/4 cup) icing sugar mixture
  • 2 tsp vanilla bean paste
  • 14 (about 160g) savoiardi (sponge finger biscuits), coarsely chopped
  • 160ml (2/3 cup) Frangelico liqueur
  • Toasted shredded coconut, to serve
Instructions:
  • Thaw the berries in a large bowl for 3 hours.
  • In a large bowl, mix together the cream, mascarpone, icing sugar, and vanilla bean paste until the mixture thickens slightly and soft peaks form when whisked with a balloon whisk.
  • Layer half of the biscuits in four 435ml (1 3/4-cup) serving glasses. Drizzle half of the Frangelico over the biscuits. Add half of the berries and their liquid. Spoon half of the mascarpone mixture on top. Repeat layers with remaining biscuits, berries, and mascarpone mixture.
  • Chill the parfaits in the fridge for 3-4 hours. Serve topped with toasted shredded coconut.
