Vanilla crepes with mascarpone and berry coulis

Ingredients:
  • 150.00 gm self-raising flour, sifted
  • 321.88 gm milk
  • 1 egg
  • 2.20 gm vanilla extract
  • Butter or cooking spray
  • Mascarpone
  • Icing sugar to dust
  • 250.00 ml frozen mixed berries, to taste
  • 18.00 gm sugar, to taste
Instructions:
  • In a cooking pot, gently cover the bottom with water. Add the berries and heat until they break down and come to a boil to create the coulis.
  • Strain the berry pulp to remove seeds and pulp, leaving a smooth liquid. Mix in sugar until fully dissolved. Chill in the refrigerator.
  • Prepare the crepes: Mix together flour, milk, egg, and vanilla extract until well combined.
  • Heat a pan with butter or cooking spray until sizzling. Pour 1/3 cup of crepe mixture into the pan for each crepe, adjusting the amount for your desired size. Once cooked, set each crepe aside, covering them with a clean tea towel to keep warm.
  • After cooking the crepes, generously spread mascarpone at one end and elegantly roll them into tubes. Typically, serve two filled crepes per person as they are delightfully decadent.
  • Generously pour the berry coulis on top of the crepe rolls and sprinkle with icing sugar. Serve immediately and savor every bite!
