Delicious vanilla-cheese filled crepes, baked with cinnamon sugar.
Ingredients:
  • 1 cup milk
  • 0.75 cup all-purpose flour
  • 2 cups cottage cheese
  • 1 teaspoon melted butter
  • 2 teaspoons white sugar
  • 1 teaspoon lemon juice
  • 0.5 teaspoon vanilla extract
  • 2 tablespoons butter, or as needed
  • 2 tablespoons cinnamon sugar, or as needed
Instructions:
  • In a blender, combine milk, whole eggs, salt, and flour until smooth. Refrigerate for at least 20 minutes. Meanwhile, in a bowl, mix cottage cheese, egg yolk, melted butter, sugar, lemon juice, and vanilla extract with an electric mixer until smooth.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and grease a baking sheet ever so lightly.
  • In a skillet over medium-high heat, melt some butter from the 2 tablespoons. Pour in 2 tablespoons of batter and swirl the pan to coat it evenly. Cook until the bottom is golden and the top is no longer wet, about 2 minutes per crepe. Repeat with the rest of the batter.
  • Place a generous amount of the filling near one edge of a crepe. Fold, tuck, and roll the crepe ensuring the filling is neatly tucked inside. Arrange seam-side-down on the baking sheet. Repeat with the remaining crepes and filling.
  • Place in the preheated oven for 10 minutes, then generously sprinkle with cinnamon sugar and bake for an additional 5 minutes or until lightly golden.
