Crepes in orange liqueur sauce

Indulge in citrusy orange crepes paired perfectly with creamy vanilla ice cream.
Ingredients:
  • 1 orange
  • 80g butter, chopped
  • 55g (1/4 cup) caster sugar
  • 60ml (1/4 cup) orange-flavoured liqueur (such as Grand Marnier or Cointreau)
  • 20.00 ml brandy
  • 12 crepes
  • Vanilla ice-cream, to serve
Instructions:
  • Zest the orange using a zester or vegetable peeler. Then, remove the white pith from the peel and cut it into thin strips. Finally, juice the orange.
  • In a large frying pan over low heat, combine orange rind, orange juice, butter, sugar, liqueur, and brandy. Stir and cook for 2 minutes until the butter melts and sugar dissolves. Add a crepe and fold into quarters, then repeat with remaining crepes. Arrange them evenly in the pan and cook for 2 minutes, shaking the pan, until the sauce slightly thickens.
  • Serve the crepes on individual plates and generously drizzle with the remaining sauce. Enjoy right away with a scoop of ice cream on the side, if desired.
