Elevate your classic PB&J by swapping bread for delicate crepes in this revamped lunchbox delight.
Ingredients:
  • 1 large egg
  • 1/2 cup skim milk
  • 1/3 cup all-purpose flour
  • 1 teaspoon olive oil
  • Pinch salt
  • Creamy peanut butter
  • Jam (your favorite flavor!)
Instructions:
  • In a blender, combine egg, milk, flour, olive oil, and salt. Blend on medium speed for 10 seconds, pausing to scrape the sides, until smooth. Chill the batter in the refrigerator for 30 minutes.
  • Chill the batter, then spray a nonstick skillet with cooking spray and heat over medium heat. Pour 3 tablespoons of batter into the skillet for each crepe. Swirl to cover the bottom and cook until lightly browned, about 1 minute. Repeat with the remaining batter, spraying the skillet as necessary. Transfer the cooked crepes to a wooden cutting board.
  • Use up all the batter.
  • Spread peanut butter down the center of each crepe, add a line of jam next to it, fold, and serve hot.
