PB&J-inspired baked oatmeal with strawberries.
Ingredients:
  • 2 cups whole frozen strawberries
  • 1 tablespoon pure maple syrup
  • 1/3 cup natural peanut butter
  • 1 tablespoon unsalted butter
  • 1/3 cup pure maple syrup
  • 1 cup unsweetened almond milk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups rolled oats
  • 1 tablespoon ground flaxseed meal (optional)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Instructions:
  • Preheat the oven to 375°F (190°C) and generously coat an 8x8-inch square baking pan with nonstick spray.
  • Place frozen strawberries in the prepared pan and generously drizzle with 1 tablespoon of fragrant maple syrup.
  • Roast in the oven until the strawberries are tender and juicy, for about 20 minutes.
  • In a large microwave-safe bowl, melt butter with peanut butter on High for about 30 seconds. Stir well. Mix in 1/3 cup maple syrup, almond milk, eggs, and vanilla extract, whisk until smooth. Add oats, flaxseed meal, baking powder, cinnamon, nutmeg, and salt. Combine all ingredients thoroughly. Pour the batter evenly over the strawberries.
  • Place the dish back in the oven and bake for 30 to 35 minutes until the oatmeal is fully set in the center. Once done, let it cool for 10 minutes before enjoying. Serve warm.
