Elevate your tea time with fun and sweet triangular surprise sandwiches for both kids' parties and grandma's visits!
Ingredients:
  • 2 x 440g packets golden butter cake mix (with icing sachet)
  • 100g white chocolate melts
  • Lemon yellow gel food colouring
  • 24 round green jubes, thinly sliced
  • 8 strawberries, hulled, thinly sliced
  • 2 banana lollies, finely chopped
  • 40.00 gm chocolate-hazelnut spread
  • 125g butter, softened
  • 10.40 gm milk
  • 2.20 gm vanilla extract
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and prepare a 7cm-deep, 11cm x 21cm loaf pan by greasing it and lining the base and sides with two layers of baking paper, making sure to extend 5cm above the edges.
  • Set aside the frosting packets from the cake mixes. Follow the instructions on the packets to prepare the cakes. Pour the batter into the prepared pan and place it on a baking tray. Bake for 1 hour and 15 minutes or until a skewer inserted into the center comes out clean. Let it rest in the pan for 5 minutes, then flip it onto a wire rack lined with baking paper to cool.
  • Lay a 20cm-long sheet of baking paper on a flat surface. Melt white chocolate in a small heatproof bowl over simmering water (avoiding bowl contact with water). Color the chocolate bright yellow with food coloring. Spread chocolate on paper to make a 16cm square. Let it set for 30 minutes. Cut into 4 x 8cm squares and then into 4 triangles to shape cheese slices using a hot knife.
  • Prepare Buttercream: With an electric mixer, whip butter for 8 to 10 minutes until fluffy. Slowly incorporate icing sachets, then mix in milk and vanilla until smooth.
  • Trim 4cm off both short ends of the cake. Cut the cake into 12 x 1cm-thick slices. Trim each slice into an 8cm square. Cut each square into 4 triangles to create bread pieces. Spread buttercream on one side of each bread piece.
  • For 'Tomato, Lettuce, and Cheese' Sandwiches: Spread buttercream on 8 bread slices. Layer 3 tomato slices on each, followed by a cheese slice and strawberry slices. Top with remaining 8 bread slices, buttercream-side down.
  • For 'Egg and Lettuce' Sandwiches: - Lay 8 bread slices on a board with the buttercream side facing up. - Sprinkle chopped banana lollies on top. - Place the remaining jube slices on top. - Complete the sandwiches with the remaining 8 bread slices, buttercream-side down.
  • For 'Vegemite and Cheese' Sandwiches: Lay out 8 slices of bread, butter side up. Spread 1 teaspoon of chocolate-hazelnut spread on each slice. Add a cheese slice on top. Finish by sandwiching with the remaining 8 slices of bread, butter side down.
  • Present the sandwiches elegantly on a decorative platter and serve.
