Kid-friendly recipe disguising nutritious ingredients. Ideal for picky eaters 2+.
Ingredients:
  • Olive oil spray, for greasing
  • 20g (1 tbsp) butter
  • 50g (about 3) button mushrooms, thinly sliced
  • 8 green beans, trimmed, sliced
  • 2 green shallots, trimmed, sliced
  • 1 small (about 150g) single chicken breast fillet, chopped
  • 1 130g can corn kernels, drained
  • 4 slices square white bread
  • 70g (2/3 cup) grated cheddar
Instructions:
  • Preheat your oven to 200°C and lightly grease a baking tray with oil spray.
  • In a small frying pan over medium heat, melt butter. Add mushrooms and beans, stirring often, until tender, about 2-3 minutes. Stir in green shallots and cook for an additional minute. Transfer mixture to a small bowl and let cool for 5 minutes.
  • Combine the bean mixture, chicken, and corn in a food processor. Pulse until finely chopped.
  • Evenly layer the chicken mixture on the bread. Sprinkle with cheddar, cut into triangles, place on a greased tray, and bake in a preheated oven for 15 minutes until golden and cooked through.
