Chicken mixture spread on bread triangles, fried golden brown like shrimp toast dim sum.
Ingredients:
  • 0.5 pound skinless, boneless chicken breast halves - cut into chunks
  • 1 carrot, peeled and cut into 1 inch pieces
  • 1 egg white
  • 2 teaspoons cornstarch
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground black pepper
  • 4 slices white bread
  • 2.5 tablespoons margarine
  • 0.33333334326744 cup soy sauce
Instructions:
  • In a food processor, combine chicken, carrot, egg white, cornstarch, sugar, ginger, and black pepper until chicken is minced. Cut bread slices into 4 triangles, then generously spread each with the chicken mixture.
  • In a 12-inch nonstick skillet over medium heat, melt half of the margarine. Place half of the triangles with the spread side down in the skillet. Cook until golden brown, approximately 4 minutes, then flip with a spatula and brown the other side for about 2 minutes. Transfer to a serving platter to keep warm. Repeat the process with the remaining half of the triangles and margarine. Serve with diluted soy sauce for dipping.
