Chicken Leg Toast

Egg-soaked savory French toast with a crispy whole chicken leg on top.
Ingredients:
  • 2 chicken drumsticks
  • 0.25 cup diced carrot
  • 0.25 cup diced celery
  • 0.25 cup diced onion
  • 2 cups chicken broth
  • freshly ground black pepper to taste
  • 1 teaspoon salt, or to taste
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • cayenne pepper to taste
  • 0.33 cup creme fraiche or heavy cream
  • 2 large eggs
  • 2 thick slices day old French bread (1 to 1 1/2 inch thick)
  • 1 tablespoon butter for browning bread, plus a teaspoon for greasing pan
  • 2 tablespoons grated Parmigiano-Reggiano cheese
  • 0.25 cup maple syrup
  • 1 tablespoon Sriracha sauce
  • 0.5 teaspoon cayenne pepper
Instructions:
  • In a saucepan, mix chicken drumsticks, carrots, onions, celery, and broth. Bring to a simmer over high heat, then cover and simmer over medium-low heat for 20 minutes. Flip drumsticks, cover again, and cook for an additional 20 minutes.
  • Take out the chicken and place it on a plate. Let it cool, wrap it, and store it in the refrigerator until ready to use.
  • Set the heat to medium-high and simmer the cooking liquids in the saucepan until reduced to approximately 1/3 cup. Strain the liquid into a mixing bowl, pushing some of the cooked vegetables through the sieve. Season the gravy with black pepper, salt, thyme leaves, lemon zest, and cayenne. Stir in creme fraiche and eggs, whisking until a silky batter is created.
  • In a snug baking dish, gently nestle the bread slices and generously pour the batter over them. Give it a few tosses, cover tightly, and chill in the fridge for 1 hour or until the bread has soaked up most of the batter.
  • Preheat the oven to 400 degrees F (200 degrees C), then prepare a baking sheet by lining it with foil and lightly greasing with butter.
  • In a small skillet over medium heat, melt the butter until it browns the bread for a few minutes on each side. Transfer the bread to the prepared baking sheet.
  • Place a drumstick on top of each slice of bread, evenly distributing any extra batter. Sprinkle with salt, dust generously with Parmesan cheese, and add a touch of cayenne for a spicy finish.
  • Bake until beautifully browned in the preheated oven for 30-35 minutes.
  • Combine maple syrup, Sriracha hot sauce, and cayenne pepper in a small bowl to create "dragon syrup."
  • Drizzle dragon syrup over chicken leg toast and serve.
