Sticky hoisin chicken

Satisfying hoisin chicken dish for a duo.
Ingredients:
  • 2 x 200 g chicken legs
  • 8 spring onions
  • 1-2 fresh mixed-colour chillies
  • 3 regular oranges or blood oranges
  • 2 heaped tablespoons hoisin sauce
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4 and heat a non-stick ovenproof frying pan on high. Remove chicken skin, add both skin and legs to the pan, season with salt and pepper, and cook for 5 minutes until golden, turning halfway. Trim spring onions and halve them; set green halves aside. Add white spring onions to the pan and transfer to the oven for 15 minutes. Meanwhile, deseed chillies, slice lengthways with green spring onions, and place in ice water to curl. Peel oranges, slice into rounds, and arrange on plates. Remove chicken skin and soft spring onions from pan. Continue cooking chicken for another 10 minutes until tender. Combine hoisin sauce with red wine vinegar, spoon over chicken. Drain and divide salad. Place chicken and soft spring onions on top, and finish with crispy skin.
