Ingredients:
  • 2 x 200 g free-range chicken legs
  • 1 bulb of garlic
  • 250 g mixed-colour seedless grapes
  • 100 ml red vermouth
  • 4 sprigs of fresh tarragon
Instructions:
  • 1. Preheat the oven to 180ºC/350ºF/gas 4. 2. Heat a non-stick ovenproof frying pan on high. 3. Rub chicken with ½ tbsp of olive oil, season with sea salt and black pepper, then place skin side down in the pan. 4. Sear until golden, then lightly squash unpeeled garlic cloves, add to the pan along with grapes. 5. Turn chicken skin side up, pour in vermouth, roast in oven for 40 minutes until golden and tender, and sauce is sticky. 6. Add water to deglaze the pan, stir to combine sticky bits. 7. Sprinkle tarragon over the dish before serving.
