"Grilled sweet and sour chicken breasts in a convenient packet - a delightful surprise!"
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/2 cup sweet-and-sour sauce
  • 1 can (8 oz) pineapple chunks, drained
  • 1 medium bell pepper, cut into strips
  • 1/4 small onion, cut into small wedges
  • 1/2 cup chow mein noodles, if desired
Instructions:
  • Preheat a gas or charcoal grill. Cut four large pieces of heavy-duty foil, each measuring 18x12 inches, and coat them with cooking spray.
  • Lay one chicken breast on each piece of foil. Spread 1 tablespoon of sweet-and-sour sauce on top of each chicken breast, then add one-fourth of the pineapple, bell pepper, and onion on each. Finish by drizzling the remaining sauce over the top.
  • Wrap the chicken and vegetables in foil, making a tight seal by folding the edges twice. Leave space on the sides for heat expansion.
  • Once the grill is ready, place the packets on a gas grill over medium heat or on a charcoal grill over medium coals. Cover the grill and cook for 15 to 20 minutes, ensuring to rotate the packets halfway through. The chicken is ready when the juice runs clear and the thickest part reaches 165°F. Serve by placing each packet on a plate, cutting a large X on the top, and folding back the foil. Sprinkle with chow mein noodles on top.
