Sticky sweet chicken wings paired with flavorful couscous for a tasty Middle Eastern feast.
Ingredients:
  • 1kg chicken wing nibbles
  • 62.50 ml pomegranate molasses
  • 20.00 ml fresh thyme leaves
  • 36.40 gm extra virgin olive oil
  • 1 red onion, cut into thin wedges
  • 2 small zucchini, thinly sliced
  • 250.00 ml wholemeal couscous
  • 250.00 gm boiling water
  • 60g mixed salad leaves
  • 42.00 gm lemon juice
  • 1 pomegranate, seeds removed
Instructions:
  • Preheat your oven to 220C/200C fan-forced and line 2 baking trays with baking paper. Arrange the chicken on one of the prepared trays. Mix molasses, thyme, and half of the oil in a small jug, then drizzle over the chicken. Bake for 40 minutes, turning occasionally, until chicken is golden and cooked through.
  • While the chicken is cooking, arrange the onion and zucchini on the remaining tray. Place in the oven during the last 20 minutes of cooking time for the chicken. Season with salt and pepper to taste.
  • In a large heatproof bowl, combine couscous and boiling water. Cover and let it sit for 5 minutes. Fluff the couscous with a fork to separate the grains. Add salad leaves, zucchini mixture, lemon juice, half of the pomegranate seeds, and a portion of the oil. Toss everything together. Serve the chicken with the couscous salad, sprinkled with the remaining pomegranate seeds.
