Delicious and untested member recipe.
Ingredients:
  • 1 tsp minced garlic
  • 10.00 gm curry powder
  • 500g chicken thigh fillets, cut into pieces
  • 825g can crushed tomatoes
  • 125.00 gm fruit chutney
  • 200g sweet potato, cut into chunks
  • 200g carrots, cut into chunks
  • Natural yoghurt, (seasoned with salt and pepper), to serve
  • Brown rice or white rice, to serve
  • Poppadums, to serve
Instructions:
  • In a large frying pan or Dutch oven, heat oil over medium heat. Add onion and garlic and cook until transparent, about 3 minutes. Stir in curry powder and cook until fragrant, around 30 seconds.
  • Add the chicken and sear until beautifully golden.
  • Combine the tomatoes, stock, and vegetables in a pot and bring to a boil. Reduce heat and simmer for around 20 minutes until the veggies are tender and the liquid has thickened.
  • Add the chutney and heat for an additional minute. Serve with poppadums, rice, and yogurt.
