Mediterranean-inspired chicken and potato dish, simple yet satisfying.
Instructions:
  • 1. Preheat oven to 200°C/400°F/gas 6 and remove top shelf. 2. Scrub and chop potatoes into 2 to 5cm chunks. Quarter onions and break apart into petals. 3. In a pestle and mortar, crush half of oregano leaves with salt, pepper, olive oil, and red wine vinegar. Drizzle over potatoes and onions in a baking dish. Roast for 10 minutes. 4. Peel lemons, then cut in half. Coat chicken legs in remaining marinade. 5. Place chicken on top shelf bars above potatoes. Add lemon halves to baking dish. 6. Roast for 1 hour, shaking potatoes and onions halfway. Toss in oregano leaves and lemon strips for the final 15 minutes. 7. When golden brown, remove chicken and vegetables from oven. Squeeze roasted lemon halves over before serving.
