Healthy, crispy baked chicken nuggets that kids will devour.
Ingredients:
  • Olive oil cooking spray
  • 700g desiree potatoes, scrubbed, cut into chips
  • 700g chicken breast
  • 82.50 ml plain flour
  • 130.00 gm buttermilk
  • 375.00 ml dried multigrain breadcrumbs
  • 1 1/2 tsp garlic powder
  • 3 tsp dried chives
  • Sweet chilli sauce, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Line a baking tray with parchment paper and place a wire rack on another baking tray.
  • Spread out the potato slices evenly on the prepared baking tray. Give them a light spray of oil and toss them gently to ensure they are coated. Transfer the tray to the top shelf of the oven and bake for 20 minutes.
  • Prepare your breading station: set up a plate with flour, a shallow bowl with buttermilk, and another shallow bowl with breadcrumbs, garlic, and chives. Coat each piece of chicken in flour, then buttermilk, followed by the breadcrumb mixture. Place the coated chicken pieces on a wire rack. Repeat the process for all the chicken pieces. Finish by spraying both sides of the chicken with oil before cooking.
  • Rotate chips. Place the tray with the chicken pieces on the bottom oven shelf. Bake for 25 minutes, or until the chicken is fully cooked and the chips are golden and crispy. Serve with sauce.
