Whip up crispy chicken breast nuggets and sweet potato fries for a kid-approved, healthier feast.
Ingredients:
  • 600g chicken breast fillets
  • 14.40 gm salt
  • 500.00 ml panko breadcrumbs
  • Olive oil cooking spray
  • 800g sweet potato, peeled
  • 10.00 gm cornflour
  • 2 eggs
  • 125.00 ml plain flour
  • 200g green beans, trimmed, steamed
  • Chopped fresh curly parsley, to serve
  • 2.50 gm cornflour
  • 62.50 ml apple cider vinegar
  • 45.00 gm brown sugar
  • 20.80 gm tomato ketchup
Instructions:
  • Cut the chicken into bite-sized pieces. Dissolve salt in 1/4 cup hot water, then add 1 1/4 cups cold water. Mix well. Combine the chicken with the saltwater mixture and refrigerate for 15 minutes. Drain and transfer the chicken to a plate, pat dry with paper towel.
  • Preheat your oven to 200°C/180°C fan-forced. Spread breadcrumbs on a large tray, spray with oil, season with salt, and bake for 3 minutes. Give the tray a shake, then bake for another minute until breadcrumbs are golden. Transfer to a bowl and cool completely.
  • Cut sweet potato into thin 1cm x 7cm chips and place in a large bowl. Drizzle with oil and toss well to coat. Sprinkle with cornflour, season with salt and pepper, and toss again to coat evenly. Spread the seasoned chips onto a large baking tray and bake on the top oven shelf for 15 minutes until crispy.
  • Whisk eggs in a shallow bowl. Place flour in a separate bowl. Coat chicken in flour, then dip in egg, and coat with breadcrumb mixture, pressing gently. Transfer to a large baking tray and generously spray with oil.
  • Position tray of chips on the lowest oven shelf and chicken on the highest. Bake everything for 10 minutes, then flip the chicken and bake for an additional 5 minutes until chicken is fully cooked and chips are perfectly browned.
  • To prepare the sweet and sour sauce, start by whisking together cornflour and 1 tablespoon of water in a small saucepan until well combined. Mix in vinegar, sugar, ketchup, and soy sauce. Heat the mixture over medium heat until it comes to a simmer. Allow it to simmer for 1 to 2 minutes, stirring occasionally, until the sauce thickens. Season with salt and pepper according to your taste. Remove the sauce from the heat.
