Nutty baked chicken nuggets with wheat germ coating.
Ingredients:
  • 4 skinless, boneless chicken breasts
  • 2 eggs, beaten
  • 1 teaspoon chopped fresh parsley
  • 0.5 teaspoon dried thyme
  • 1 pinch crushed red pepper flakes
  • 0.5 cup dried bread crumbs, seasoned
  • 0.5 cup wheat germ
  • 1 teaspoon dried basil
  • 1 tablespoon vegetable oil
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and coat a baking sheet with non-stick cooking spray.
  • Prepare the chicken by removing any excess fat and cutting it into bite-sized 1-inch cubes.
  • Combine the beaten eggs, water, and chicken in a bowl.
  • Mix together the parsley, thyme, red pepper, bread crumbs, wheat germ, basil, and pepper. Use a fork to blend in the oil until everything is evenly distributed. Transfer the seasoned mixture to a resealable plastic bag and toss in the chicken pieces until coated.
  • Arrange the breaded chicken on the baking sheet and bake at 425°F (220°C) for 10 minutes. Flip the chicken pieces and bake for another 5 minutes until golden brown.
