Renowned chef B Smith elevates the classic Southern favorite, chicken and waffles, with a lighter twist using Bisquick mix for a delicious, affordable, and elegant dish.
Ingredients:
  • 1 1/4 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup Italian dressing
  • 1 cup Original Bisquick™ mix
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter or margarine, melted
  • 2 cups Original Bisquick™ mix
  • 1 1/3 cups milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 teaspoons vanilla, if desired
  • Maple syrup, if desired
Instructions:
  • Preheat the oven to 450°F. Cover a cookie sheet with foil and generously spray it with cooking spray.
  • Place the chicken and dressing in a medium bowl and toss to ensure the chicken is evenly coated. Allow it to marinate in the refrigerator for 15 to 20 minutes, remembering to stir the mixture twice during this time.
  • In a separate medium bowl, combine 1 cup Bisquick mix with seasoned salt and pepper. Dredge chicken in the mixture, ensuring all sides are coated. Transfer the coated chicken pieces onto a baking sheet, then drizzle melted butter over the top. Bake without covering for 11 to 14 minutes, flipping halfway through, until the chicken is cooked through and no longer pink in the center.
  • Heat up the waffle iron and grease it with shortening or vegetable oil.
  • Mix together all waffle ingredients, excluding syrup, until well combined. Pour a little less than 2/3 cup of batter onto the middle of the heated waffle iron for each waffle. Close the waffle iron and cook for around 5 minutes, or until steam subsides. Gently take out the waffle and enjoy it with chicken nuggets and syrup.
