Beef and vegetable pastries

Spicy triangle pastry bites inspired by Indian samosas, perfect for entertaining.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, chopped
  • 2.40 gm salt
  • 20.00 ml cumin seeds
  • 1 tsp ground turmeric
  • 1 tsp chilli powder
  • 300g lean beef mince
  • 400g Sebago potatoes, peeled, diced, washed
  • 21.00 gm lemon juice
  • 82.50 ml coriander leaves, chopped
  • 3 sheets frozen ready-rolled puff pastry, partially thawed
  • 1 egg, lightly beaten
Instructions:
  • In a frying pan, heat oil over medium heat. Add onion and salt; cook and stir for 5 minutes until very soft. Increase heat to high; add cumin seeds, turmeric, chilli powder, and garlic. Cook and stir for 1 minute until aromatic. Finally, add mince and cook for 5 minutes until browned, stirring occasionally.
  • In a shallow microwave-safe dish, place the potatoes and cover them. Microwave on HIGH power for 5 minutes or until they are just tender. Drain any excess liquid and roughly mash the potatoes.
  • Combine potato into the mince mixture. Mix thoroughly until well incorporated. Place the filling into a bowl and allow it to cool completely. Gently fold in the lemon juice and coriander.
  • Preheat your oven to 200C and line a large baking tray with parchment paper.
  • Cut one sheet of pastry into 4 squares, spoon filling into the center of each square, fold into triangles, seal the edges with a fork, place on tray, brush with egg, bake until golden (18 to 20 minutes), serve with green salad.
