Beef and seven vegetable pasties

Delicious bites perfect for any occasion.
Ingredients:
  • 400g 3 star beef mince
  • 1 small brown onion, cut into small dice
  • 1 medium carrot, peeled and cut into 1 cm dice
  • 1 baby potato, peeled and cut into 1 cm dice
  • 125.00 ml frozen peas
  • 125.00 ml fresh corn kernels or frozen corn kernels
  • 1 medium tomato, cut into small dice
  • 1000.00 ml baby spinach
  • 62.50 ml fresh flat-leaf parsley, roughly chopped
  • 4 sheets short crust pastry, cut into 20 cm rounds
  • 1 Brand free range egg, lightly beaten
  • 40.00 ml shredded parmesan cheese
  • Coles Brand squeezy tomato sauce, to serve
Instructions:
  • Preheat the oven to 200C (180C fan-forced) for a perfectly cooked dish.
  • In a large frying pan over high heat, sizzle the beef in hot oil for 5 minutes, ensuring to break up any big chunks.
  • Sauté the onion, garlic, carrot, and potato in the pan for 3 minutes, stirring frequently. Lightly season with salt and pepper.
  • Stir in peas, corn, tomato, and spinach. Cook for an additional minute until spinach wilts. Remove from heat, mix in parsley, season with salt and pepper to taste, and let cool for 5 minutes.
  • Place the 4 rounds of pastry on a clean surface. Divide the filling evenly among them in the center. Brush the edges with egg wash and seal the pasties by folding and crimping the edges together.
  • Lay the pastries on a baking tray lined with parchment paper. Brush with some of the leftover egg wash and sprinkle with Parmesan cheese.
  • Bake until the pastry turns a beautiful golden brown, about 18-20 minutes.
  • Allow to sit at room temperature for 5 minutes before enjoying with the tomato sauce.
