Elevate weeknight meals with a luxurious beef, spinach, and pine nut pie.
Ingredients:
  • 1 brown onion, chopped
  • 500g beef mince
  • 100g baby spinach
  • 40.00 ml pine nuts
  • 40.00 ml chopped fresh mint leaves
  • 65.63 gm lemon juice
  • 6 sheets ready-rolled puff pastry, partially thawed
  • 100g feta, crumbled
  • 1 egg, lightly beaten
  • 2 tsp poppy seeds
  • Lemon wedges, to serve
Instructions:
  • In a hot frying pan, sauté onion and garlic until onion softens for about 3 minutes. Add the mince and cook while breaking it up with a wooden spoon until browned, about 8 minutes.
  • Saute spinach and pine nuts until wilted. Add mint, lemon juice, salt, and pepper. Cool mixture. Preheat oven to 200°C/180°C fan-forced. Grease and line 2 large baking trays. Cut 24 rounds from pastry sheets using an 11.5cm cutter. Fill each round with 2 tablespoons of mince mixture, 2 teaspoons of feta. Seal with another pastry round, brush with egg, and sprinkle with poppy seeds. Place on trays and bake.
  • Bake until pastry is golden and puffed, approximately 20 minutes. Serve with lemon wedges.
