Transform frozen berries and maple syrup into a sweet sauce for crepes in this elegant dessert that you'll adore.
Ingredients:
  • 3 cups mixed frozen berries
  • 0.5 cup maple syrup
  • 4 large eggs
  • 1.5 cups milk
  • 1 cup all-purpose flour
  • 1.25 tablespoons white sugar
  • 0.75 teaspoon salt
  • 1 tablespoon unsalted butter, or as needed
  • 0.25 cup whipped cream, or to taste
Instructions:
  • In a saucepan over medium-high heat, combine frozen berries and maple sauce. Simmer, stirring occasionally, until berries are defrosted and mixture is gently boiling, approximately 10 minutes. Lower heat to medium and use a potato masher to mash berries to your preferred consistency.
  • Beat eggs in a bowl with an electric mixer until lemon colored, then stir in milk. Sift flour, sugar, and salt into the bowl and mix until batter is smooth while the sauce cooks.
  • Butter the skillet and heat over medium heat. Spoon batter into the skillet and cook until lightly browned on the bottom, approximately 1 to 2 minutes. Flip and cook for another 1 to 2 minutes. Transfer to a plate and continue cooking the rest of the crepes.
  • Fold the crepe elegantly on a plate, generously spoon over the flavorful berry sauce, and finish with a dollop of dreamy whipped cream on top.
