Mixed Berry Trifle

Create a simple and elegant dessert by layering whipped cream, berries, and pound cake.
Ingredients:
  • 1 (12 ounce) bag mixed frozen berries
  • 0.25 cup cream sherry
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon grated lemon zest
  • 2 cups heavy cream, chilled
  • 1 tablespoon white sugar
  • 1 (12 ounce) loaf prepared pound cake
  • 0.5 cup toasted coconut
Instructions:
  • In a bowl, mix together the berries, sherry, lemon juice, and lemon zest until well combined. Set aside.
  • Whisk the heavy cream in a large bowl until soft peaks form. Slowly incorporate the sugar until stiff peaks form. Chill the cream until ready to use.
  • Slice the pound cake into 1/3-inch wide slices, removing the cake ends.
  • Create your trifle by arranging cake slices at the base of a glass serving bowl. Pour half the berry mixture with juice over the cakes. Layer with half of the whipped cream and half of the coconut. Repeat the process with the remaining cake, berries, juice, whipped cream, and coconut. Chill in the refrigerator for at least 1 hour before serving.
