Berry and mascarpone trifle

Quick and easy Christmas dessert recipe. Merry Christmas from Taste.com.au!
Ingredients:
  • 2 egg yolks
  • 55g caster sugar
  • 60ml frangelico
  • 250g ctn mascarpone
  • 8 x 1cm-thick slices panettone
  • 300g mixed berries, fresh or frozen
Instructions:
  • Whisk egg yolks and sugar with a balloon whisk in a medium bowl until light and fluffy. Incorporate 1 tablespoon of Frangelico, whisk until smooth, then gently fold in the mascarpone with a metal spoon until just combined.
  • Using an 8cm round pastry cutter, cut out discs from the panettone slices. Brush four discs with a bit of the leftover Frangelico. Arrange them at the base of four 1-cup (250ml) capacity serving glasses. Divide half of the berries among the glasses. Layer with half of the mascarpone mixture.
  • Layer the rest of the berries, mascarpone mixture, panettone, and Frangelico, ending with a mascarpone layer. Cover with plastic wrap and refrigerate for 30 minutes before serving.
