Ingredients:
  • 180g butter, softened
  • 100g (1/2 cup) caster sugar
  • 4.40 gm vanilla extract
  • 200g (1 1/3 cups) plain flour
  • 35g (1/4 cup) cornflour
  • 4.00 gm baking powder
  • Whipped cream, to serve
  • 375.00 ml fresh berries
  • Extra fresh berries, to serve
  • 12.00 gm icing sugar, to serve
Instructions:
  • Preheat the oven to 160°C. Line 2 baking trays with baking paper and mark a 19cm circle in the center of each sheet.
  • Cream butter, sugar, and vanilla until light and fluffy. Add flour, cornflour, and baking powder, then mix until combined. Transfer the dough to a floured surface and knead until smooth.
  • Split the mixture in half and place one portion in the center of each circle, pressing evenly to shape the circles.
  • Lightly score each pastry disc into 8 even triangles using a sharp knife. Bake until golden, about 30 minutes. Allow to cool for 10 minutes before transferring to a wire rack. Place one pastry disc on a cake stand, top with Dairy Whip and berries. Add the second disc aligning the triangles. Decorate with extra berries and dust with icing sugar.
