Mixed berry Eton mess recipe

Indulge in Eton mess for two, but be sure to double the recipe for irresistible seconds!
Ingredients:
  • 250g strawberries
  • 150g fresh or frozen blackberries
  • 250g raspberries, torn
  • 1 orange, juiced
  • 1/2 lime, juiced
  • 55g icing sugar mixture
  • 3 tsp vanilla bean paste
  • 500g crème fraîche
  • 300ml thickened cream
  • 9 Meringue Nests, halved
  • 10 Macarons*, halved
Instructions:
  • Roughly chop half of the strawberries and combine them in a bowl with blackberries and half of the raspberries. Pour in the orange juice, lime juice, ¼ cup (40g) icing sugar, and 1 tsp vanilla. Gently crush the berry mixture with a fork. Let it sit for 30 minutes until the berries release their juices.
  • Whip crème fraîche, cream, remaining icing sugar, and vanilla with an electric mixer until firm peaks form in a large bowl. Then gently fold in the berry mixture using a slotted spoon, marbling it while reserving the juices in the bowl.
  • Layer one-third of the meringue and macaron in a serving dish and generously top with dollops of crème fraîche mixture. Repeat layering with the rest of the meringue, macaron, and crème fraîche mixture.
  • Slice the remaining strawberries thinly and sprinkle over the meringue mixture in the dish along with the remaining raspberries. Drizzle with the reserved syrup and serve immediately.
