Indulge in a cozy berry crumble dessert with a special note for Low FODMAP diets.
Ingredients:
  • 112.50 gm self-raising flour
  • 1 tsp ground cardamom
  • 125g butter, cubed, chilled
  • 50.00 gm rolled oats
  • 268.75 gm caster sugar
  • 62.50 ml slivered almonds
  • 125.00 gm water
  • 2 tsp rosewater essence (optional)
  • 500g frozen mixed berries, thawed
Instructions:
  • Combine the flour and cardamom in a bowl, and then rub in the butter until the mixture resembles breadcrumbs. Next, stir in the rolled oats, 1/4 cup of caster sugar, and almonds before covering and chilling in the fridge.
  • Preheat the oven to 180°C. Combine remaining sugar, water, and rosewater in a saucepan over medium heat. Stir until the sugar dissolves, then bring to a boil.
  • Lower the heat and allow the syrup to simmer for 7 minutes, or until it reduces and thickens. Let it cool.
  • Gently fold berries into syrup. Divide the mixture evenly among 4 ovenproof ramekins or heatproof cups with a 3/4-cup capacity. Top with crumble mixture and bake.
  • Bake until golden for around 25 minutes.
