Delicious winter crumble for cozy nights.
Ingredients:
  • 15g butter
  • 1.2kg pear
  • 1 tsp vanilla paste (see note)
  • 500.00 ml frozen mixed berries
  • Double cream or ice cream, to serve
  • 75g plain flour
  • 80g brown sugar
  • 75g butter, chopped
  • 50.00 gm rolled oats
  • 60g pecan nuts, chopped
  • 16.25 gm shredded coconut
Instructions:
  • Preheat the oven to 180°C (160°C fan-forced).
  • In a large frying pan over medium heat, melt the butter. Add the pear, vanilla, and caster sugar, stirring well to combine. Cover and cook for 5-6 minutes until the pear is just tender. Remove from heat and gently stir in the berries.
  • For the topping, combine flour and brown sugar in a bowl. Rub in butter until mixture resembles coarse breadcrumbs, then mix in oats, pecans, and coconut using your hands until fully combined.
  • Divide the pear mixture evenly among 6 one-cup capacity, oven-proof dishes. Sprinkle the topping over each dish. Bake for 15-20 minutes, or until the topping turns golden. Enjoy topped with double cream or ice cream.
