Enhance sweet seasonal pears with this delightful poached pear recipe.
Ingredients:
  • 1000.00 ml cranberry juice
  • 45.00 gm brown sugar
  • 1 cinnamon stick
  • 4 ripe pears, peeled, halved and cored
  • 250.00 ml vanilla yoghurt
Instructions:
  • In a medium saucepan, combine cranberry juice and brown sugar over medium heat, stirring until the sugar is dissolved. Then, gently introduce the cinnamon stick and pears into the mixture.
  • Bring the mixture to a boil. Lower the heat and let it simmer, partially covered, for about 15 minutes until the pears are tender. Remove and discard the cinnamon stick before serving.
  • Transfer the pears to a plate and keep them aside.
  • Pour 1 1/2 cups of strained liquid into a jug and discard the remainder. Transfer strained liquid back to the saucepan and bring it to a boil. Simmer for 10 minutes until the liquid is reduced by half.
  • Drizzle syrup over poached pears, then add a dollop of vanilla yoghurt or custard before serving.
