Spiced cranberry slow-cooker poached pears

Poached pears with cranberry, vanilla, cinnamon, and star anise create a delicious winter dessert.
Ingredients:
  • 4 firm pears, peeled
  • 1.5l cranberry juice
  • 110g caster sugar
  • 1 tsp vanilla bean paste
  • 1 cinnamon stick or quill
  • 2 whole star anise
Instructions:
  • Add the pears to a slow cooker. Mix cranberry juice, sugar, vanilla, cinnamon, and star anise in a jug. Pour the mixture over the pears, adding water as needed to cover them completely. Place a baking paper disc on top to keep the pears submerged in the poaching liquid.
  • Cook the pears on low heat for 3 hours until they are tender, then remove them from the pot using a slotted spoon and place them in a bowl.
  • Pour the poaching liquid into a large saucepan and bring it to a boil over high heat. Cook and stir occasionally for 20 minutes until the syrup reduces by three-quarters and thickens. Pour the mixture over the pears, cover with plastic wrap, and chill in the fridge overnight.
  • Arrange the pears elegantly on serving plates and generously drizzle with the luscious syrup.
