Spiced cranberry poached pears

Ingredients:
  • 1500.00 ml cranberry juice
  • 675.00 gm sugar
  • 2 cinnamon sticks, broken
  • 1 vanilla bean, split
  • 1 tsp ground star anise
  • 6 pears
Instructions:
  • In a large, shallow saucepan, combine cranberry juice, sugar, cinnamon sticks, vanilla bean, and star anise. Stir over low heat until sugar dissolves. Simmer uncovered for 10 minutes.
  • Peel and core pears and place them in poaching liquid. Cover with non-stick baking paper and a saucepan lid to keep them submerged. Cook on low heat for 40-60 minutes, turning occasionally, until pears are tender.
  • Carefully place the pears onto individual serving plates using a slotted spoon. Drizzle a generous amount of the syrup over the pears and serve with a dollop of cream, if desired.
