Delicious vanilla pear walnut muffins, perfect for celebrating the flavors of fall.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup buttermilk
  • 0.5 cup canola oil
  • 2 eggs, at room temperature
  • 2 pounds pears - peeled, cored, and coarsely chopped
  • 1 cup chopped walnuts
  • 3 tablespoons white sugar
  • 2 tablespoons ground walnuts
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease 14 muffin cups.
  • Combine flour, 1/2 cup sugar, baking powder, 2 teaspoons cinnamon, nutmeg, baking soda, and salt in a large bowl, whisking until well mixed.
  • Combine buttermilk, oil, eggs, and vanilla extract in a separate bowl and whisk until well blended. Add the flour mixture and mix until just moistened. Gently fold in the pears and chopped walnuts with a few quick strokes.
  • Fill the muffin cups to the top with the batter using a spoon.
  • Combine 3 tablespoons of sugar, ground walnuts, and 1/2 teaspoon of cinnamon in a small bowl to create the topping, then sprinkle it evenly over the batter.
  • Bake in the preheated oven for 20 to 25 minutes until a toothpick inserted in the center comes out clean. Let the muffin tins cool on a wire rack for 5 minutes before removing the muffins.
