Delightful vanilla pear muffins, perfect for breakfast or a tasty snack.
Ingredients:
  • 1 cup whole wheat flour
  • 0.5 cup all-purpose flour
  • 0.75 cup white sugar
  • 1.5 teaspoons baking powder
  • 0.5 cup low-fat vanilla yogurt
  • 0.5 cup canola oil
  • 1 ripe pear - peeled, cored, and diced
Instructions:
  • Preheat the oven to 450 degrees F (230 degrees C) and prepare a 12-cup muffin tin with paper liners or grease.
  • In a bowl, combine whole wheat flour, all-purpose flour, sugar, baking powder, and salt. In a separate bowl, mix yogurt, oil, egg, and vanilla extract until smooth. Stir the yogurt mixture into the flour mixture until just combined. Gently fold in the pear and pecans. Spoon the batter into the muffin cups and bake.
  • Preheat the oven and place the muffin tin inside. Bake the muffins at 350 degrees F until golden brown and a toothpick comes out clean, about 20-25 minutes. Let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
