Vanilla pear compote

Australian Packham pears: Juicy, rich flavor, perfect for eating fresh, baking in tarts, or poaching with vanilla for a sweet compote.
Ingredients:
  • 5 ripe Packham pears
  • 185ml (3/4 cup) apple juice
  • 1 vanilla bean, halved lengthways, seeds separated
Instructions:
  • Peel the pears and cut them in half lengthways. Remove the core from each pear half using a melon baller or a teaspoon, then cut the pear halves in half again lengthways.
  • In a medium saucepan, mix the pear, apple juice, vanilla bean, and vanilla seeds. Bring to a boil over medium-high heat. Place a piece of non-stick baking paper over the surface. Reduce heat to low and simmer for 30 minutes, stirring occasionally, until the pear is tender.
