Moist muffins filled with banana, pear, and vanilla yogurt, boasting a fiber boost from flax seeds.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 0.25 cup ground flax seeds
  • 0.5 teaspoon baking powder
  • 2 ripe bananas
  • 0.5 cup light brown sugar
  • 0.5 cup margarine
  • 3 eggs
  • 0.5 teaspoon vanilla extract
  • 1 cup vanilla yogurt
  • 1 ripe pear, chopped
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and prepare a muffin tin with paper liners.
  • Combine all-purpose flour, whole wheat flour, ground flax seeds, baking soda, baking powder, and salt and sift them in a large bowl.
  • In a separate bowl, mix together bananas, white sugar, brown sugar, and margarine until creamy and fluffy using an electric mixer. Add eggs one at a time, followed by vanilla extract and vanilla yogurt. Gradually mix in the flour mixture until well combined, then gently fold in the pear.
  • Divide the batter evenly into the muffin cups, filling each one one-third full.
  • Bake in the preheated oven for 15 to 20 minutes until the tops are golden brown and a toothpick inserted in the center comes out clean. Then, transfer to a cooling rack to cool.
