Indulgent crowd-pleasing trifle - visually stunning and delicious.
Ingredients:
  • 2 x packs frozen mixed berries
  • 56.25 gm sugar
  • 1 unfilled sponge cake
  • 131.25 gm orange juice
  • 252.50 gm cream
  • 4.40 gm vanilla extract
  • 32.00 gm brown sugar
  • 600g mascarpone
Instructions:
  • In a spacious saucepan, mix the berries with sugar and cook for 10-15 minutes until the sugar dissolves and the mixture thickens into a syrup. Let it cool off the heat until completely chilled.
  • Next, tear apart 1 unfilled sponge cake into large pieces and place them in a large glass bowl. Pour over some orange juice, followed by spooning half of the berry mixture on top of the sponge layer. Combine cream, vanilla extract, brown sugar, and mascarpone in a large bowl, then whisk together. Pour the cream mixture over the berries. Finish by adding the remaining berry mixture on top. Enjoy your delicious dessert!
