Elevate your morning with a chic berry breakfast creation.
Ingredients:
  • 250g strawberries, hulled, thinly sliced
  • 125g raspberries
  • 53.75 gm caster sugar
  • 250.00 ml plain flour
  • 515.00 gm milk
  • 3 eggs
  • Olive oil cooking spray
Instructions:
  • Combine the strawberries, raspberries, and sugar in a bowl, tossing them together. Refrigerate the mixture, covered, for 2 hours before serving.
  • Sift flour into a bowl. In a separate jug, whisk eggs and milk together. Gradually combine milk mixture with flour, whisking until smooth.
  • Prepare a medium non-stick frying pan by spraying it with oil and heating over medium heat. Pour 2 1/2 tablespoons of batter into the pan, swirling to cover the base. Cook until light golden (2-3 minutes), then flip and cook for an additional minute. Transfer to a plate and cover to keep warm. Repeat with the remaining batter.
  • Top the delicate crepes with a vibrant berry mixture for a delectable presentation.
