"Delightful vegetarian meal: savory crepes with assorted mushrooms."
Ingredients:
  • 50g butter, chopped
  • 1 small brown onion, thinly sliced
  • 1 garlic clove, crushed
  • 2 tsp fresh thyme leaves
  • 200g Swiss brown mushrooms, thinly sliced
  • 200g portobello mushrooms, thinly sliced
  • 200g cup mushrooms, thinly sliced
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 250.00 ml plain flour
  • 515.00 gm milk
  • 3 eggs
  • Olive oil spray
Instructions:
  • In a large frying pan, melt butter over high heat. Add onion and cook, stirring occasionally, until tender (3-4 minutes). Add garlic, thyme, and mushrooms and cook until mushrooms are browned and tender (5-7 minutes). Stir in parsley, then cover the pan to keep the dish warm.
  • Prepare the Basic Crepes by sifting flour into a bowl. In a separate jug, whisk together milk and eggs. Gradually add the milk mixture to the flour and whisk until fully combined.
  • Grease a medium non-stick frying pan with oil and heat over medium heat. Pour 2 1/2 tablespoons of batter into the pan and swirl to cover the base. Cook for 2 to 3 minutes until light golden, then flip and cook for an additional minute. Transfer to a plate and cover to keep warm. Repeat with the rest of the batter.
  • Top the crepes with a savory mushroom mixture before serving.
