Crepes with strawberries and cream

Elevate strawberries and cream to a gourmet experience fit for a grand event like Wimbledon.
Ingredients:
  • 250.00 ml plain flour
  • 515.00 gm milk
  • Olive oil cooking spray
  • 300ml thickened cream, whipped
  • 6.00 gm icing sugar mixture, sifted
  • 4.40 gm Queen vanilla extract
  • 250g strawberries, hulled, halved
  • Strawberries, to serve
Instructions:
  • Sift flour into a bowl. In a jug, whisk together milk and eggs. Pour milk mixture into the flour and whisk until fully combined.
  • 1. Grease a medium non-stick frying pan with oil and heat over medium heat. 2. Pour 2 1/2 tablespoons of batter into the pan and swirl to cover the base. 3. Cook for 2 to 3 minutes until light golden, then flip and cook for another minute. 4. Transfer to a plate and cover to keep warm. 5. Repeat with the rest of the batter.
  • In a bowl, mix together cream, icing sugar, and vanilla. Spread 1/3 cup of the cream mixture onto a crepe. Add strawberries on top. Roll up the crepe to enclose the filling. Repeat with the rest of the crepes and filling.
  • Sprinkle crepes with powdered sugar and enjoy with fresh strawberries.
