Mango crepes with star anise syrup

Elevate weekend breakfasts with mango crepes drizzled in star anise syrup for a delicious treat.
Ingredients:
  • 250.00 ml plain flour
  • 450.63 gm milk
  • 2 eggs
  • 2 small mangoes, peeled, coarsely chopped
  • 300ml thickened cream, whipped
  • 161.25 gm caster sugar
  • 2 whole star anise
  • 1 vanilla bean, split
Instructions:
  • To make star anise syrup, simply combine sugar and 1 cup of warm water in a saucepan over medium heat. Stir until water comes to a boil and sugar is dissolved. Add star anise and vanilla bean, then reduce heat to low. Let it simmer for 15 minutes until slightly thickened. Remove from heat and cool to room temperature. Scrape vanilla bean seeds into the syrup, discard star anise and vanilla bean. Refrigerate the syrup until needed.
  • In a large bowl, create a well in the center of the sifted flour. In a separate container, whisk together milk and eggs until well combined, then pour this mixture into the flour gradually, whisking until smooth. Finally, stir in 1 tablespoon of butter, cover, and let it rest for 30 minutes before combining diced mango and cream in a separate bowl.
  • Preheat a small frying pan over medium heat. Brush the pan with a bit of the remaining butter. Pour 2 tablespoons of batter into the center of the pan, swirling to coat the bottom. Cook for 2 minutes until lightly golden. Flip and cook for 30 seconds until golden and cooked through. Transfer to a plate. Repeat with the rest of the butter and batter to make a total of 16 crepes.
  • Fold the crepes into quarters and arrange them on plates. Fill each crepe with a generous tablespoon of the mango mixture. Drizzle with syrup before serving.
