End your meal with Curtis Stone's refreshing summer dessert featuring fresh tropical fruit toppings.
Ingredients:
  • 757.50 gm Brand Thickened Cream
  • 225.00 gm Brand White Sugar
  • 86.63 gm fresh lime juice
  • 60.00 ml tequila
  • 2 tsp fine lime zest
  • 1 mango, peeled, pitted, diced (about 2 cups)
  • 1 banana, peeled, diced
  • 3 passionfruits
Instructions:
  • To prepare the cremes: In a medium heavy saucepan, heat the cream and sugar until boiling over medium-high heat, stirring until the sugar dissolves. Let it boil for 3 minutes, stirring constantly, and adjust the heat as necessary. Take the saucepan off the heat, then mix in the lime juice and tequila. Let it cool for 10 minutes before adding the lime zest.
  • Divide the creme mixture evenly among eight small dessert cups or glasses, using around 1/2 cup for each. Cover and refrigerate until set, for at least 4 hours or overnight.
  • Combine mango and banana in a large bowl. Scoop out passion fruit pulp and juice, then pour over the fruit mixture. Gently toss to coat all the fruit with the passion fruit.
  • Spoon the fruity goodness over the creamy desserts and enjoy right away.
