Tequila & lime grilled pineapple

Easy summer treat: tequila-pineapple dessert with your choice of ice cream.
Ingredients:
  • 40g butter
  • 1 (about 1.2kg with skin on, top removed) ripe pineapple, peeled, halved lengthways, thickly sliced crossways
  • 32.00 gm brown sugar
  • 80ml (1/3 cup) silver tequila
  • 60ml (1/4 cup) fresh lime juice
  • Macadamia ice-cream or vanilla ice-cream, to serve
Instructions:
  • In a frying pan over medium-high heat, melt half of the butter until it foams. Add half of the pineapple slices and cook each side for 1 minute until golden. Sprinkle half of the sugar and cook for 2 minutes, turning occasionally until pineapple caramelizes. Transfer to a plate and cover with foil. Repeat the process with the remaining butter, pineapple, and sugar.
  • Heat pan over medium heat, pour in tequila and lime juice, bring to a boil, and let it simmer for 1 minute until slightly thickened. Toss in the pineapple to coat with the syrup, then remove from heat.
  • Transfer the pineapple to serving bowls and generously drizzle with the syrup before indulging with a scoop of refreshing ice cream.
